Sparkling Nutmeg Muffins

SPARKLING NUTMEG MUFFINS

Adapted from Frank’s Famous Kitchen

3 cups all purpose flour

1 cup sugar

3 ½ teaspoons baking powder

1 teaspoon pure vanilla extract

1 teaspoon ground nutmeg

¼ teaspoon salt

2 eggs

1 cup milk

1 cup melted butter

Preheat oven to 350 degrees. In a mixing bowl combine the six dry ingredients. Make a well in center. In a second bowl add slightly beaten eggs to butter. Stir in milk. Pour liquid slowly into the well of dry ingredients. Stir until just moistened. Batter will be lumpy. Spoon butter into slightly greased muffin tin or tin lined with paper cupcake liners. Bake for 20-25 minutes until golden brown. Topping: Combine ½ cup sugar with ½ teaspoon brown sugar in shallow bowl. Use ½ cup melted butter to coat the muffin tops, then dip muffin tops into sugar mixture.

Makes 12 large muffins.
